Holiday flare that’s to dine for – Appian Way

Appian Way in Orange is another family-owned restaurant. In the Italian tradition, Bruno La Banca opened The Appian Way 25 years ago. Fourteen years ago he made his son Robert, known to everyone as Bobby his partner. Today, Bobby La Banca’s sister Brianna waits on tables part-time and does the books.

For 24 of the 25 years that the Appian Way has been opened the kitchen has been under the direction of Chef Jaime Rey, whose specialties include pollo cardinale, breast of chicken layered with roasted peppers and prosciutto, then topped with mozzarella and served over spinach with a sauce made of sherry and demi-glace; and veal “Appian Way,” broiled veal chops sauteed with mushrooms and garlic, served over escarole with a sauce of white wine and demi-glace.

For the holidays, the tables will be covered with red and green linens and fresh flowers. The ballroom, which seats 300 people, will be decorated with a 14-foot tree with 10,000 lights. Trees and colored and white lights will decorate the two other banquet rooms and the dining room.
